Aosta Valley Traditional Cheese

Filed under: Traditional food & wine mountain — ebar @ 16:15

Formaggi tipici Valle d'Aosta, cantina stagionatura

Aosta Valley traditional cheeses produced by Perraillon’s family farm business, at Chambave, just few km away from the well-recognized Fénis castle.

Once cheese was cooked using bundles, today Ives and his family prepare their dairy products with modern and technological methods, but tastes and fragrances remain the same and recall nature and mountain genuine traditions.

Fontina, fromadzo, toma, reblec, seras (ricotta cheese), salignon (ricotta cheese with salt, paprika, spices, aromatic herbs, garlic…): these are typical cheeses coming from the Aosta Valley culinary history and tradition.

The Perraillon’s farm business takes part to a project for the Aosta Valley cheeses valorisation (called Itinéraires des fromages), it could be an interesting idea for a visit during your next mountain vacation.
